This winter dessert from Restaurant Noma hovered to my table on a frosted winter evening in Copenhagen 2010. Surrounding the warm, gooey brown cheese center is a ring of chilled—almost frozen—beetroot. And scattering the top of the cheese are leaves and small pieces of puffed licorice.

This dessert comes straight out of an alien movie, and it kind of tasted like it, as well. Cold on the outside, warm in the middle. Crunchy on the outside, gooey in the middle. Sweet on the outside, salty in the middle. Food, like life, is about contrast and balance. If it wasn’t that way, then it would just be boring. And, as my friend chef Daniel says, “Food should never be boring.”1
